Dar Soukkar stands on the Route de l'Ourika, about ten minutes south of Jemaa El Fna, inside a building whose origins reach back to the 16th century. The structure was originally a Saadian-era sugar factory, and fragments of that industrial past are still visible in the stonework and the massive vaulted arches that frame the main hall. The name translates as "the house of sugar" in Arabic, a nod to the site's earliest purpose. Opened to the public in 2016 as a nightly dinner-show destination, the space is vast. Indoors, ochre brick walls, towering colonnades, and ornate chandeliers set a tone that lands somewhere between palatial and theatrical. A lounge and covered terrace extend the interior, while outside, a 1,200 m² open-air terrace doubles the footprint. The kitchen works across three registers: Moroccan, Asian, and Mediterranean, served a la carte or as set menus that move from starters through tagines and grilled mains to dessert. But the real draw is the show. Every evening, the central courtyard becomes a stage for a continuous programme of live music, oriental dance, Gnawa rhythms, and fire performance that runs alongside dinner and stretches well past midnight. The scale is deliberate, making it as much an entertainment venue as a restaurant. Smart dress is expected, and the atmosphere rewards it.
