Arva at Amanjena is Aman's signature Italian restaurant, set within the rose-hued walls of a resort that feels like its own walled city on the Route de Ouarzazate, twelve kilometres from the Medina. The setting does most of the talking: alfresco tables look out over the central pool, its surface catching the colour of tadelakt and sky, while shaded arches frame the space with the kind of geometry that the resort's architecture repeats at every turn. Inside, handcrafted tiles and soft lighting keep the mood intimate and warm. The kitchen works with seasonal ingredients sourced from the property's organic garden and local suppliers, building a menu rooted in Italian tradition but shaped by what grows here. Dishes are designed for sharing, portioned with generosity, and prepared with a restraint that lets the produce lead. This is not Mediterranean-Moroccan fusion; it is Italian cooking that happens to benefit from North African soil, sunlight, and olive oil. Amanjena itself, designed around Moorish symmetry, olive groves, and fountains, sets a tone of deliberate stillness that carries into every meal.
