Overview
The Mandarin Oriental spreads across twenty hectares on the edges of a golf course outside the city, and its bars are designed to make full use of a landscape that does not resemble the red walls and narrow streets of the Medina. Three distinct bar spaces define the experience, each operating at a different hour and register. The Ling Ling Bar overlooks the resort's long pools and olive groves from its terrace, an eclectic setting where cocktails and small plates are taken in an outdoor environment that moves between lounge and social. The atmosphere is animated without being loud, and the openness of the setting gives the experience a horizontal quality that the walled riads of the city cannot offer. The Shirvan Bar is positioned for the sunset hour, when the Atlas Mountains take on the warm tones of late afternoon. The cocktail programme here is built around infused spirits, homemade syrups, and fresh botanicals, with bold spice notes that reference the landscape. The terrace faces the mountain range, and the drinks are made to be held while watching the light change. As evening falls, The Tent takes over. An open-air lounge beneath swaying palms, it serves signature cocktails inspired by Morocco's diverse regions, paired with tapas, as curated music sets the pace. It is where the resort's social energy concentrates after dark, combining the natural beauty of the grounds with a nightlife register that carries the evening forward. Together, the three spaces give the Mandarin Oriental a drinks offering that moves through the day in sequence, each bar earning its moment. The twenty-hectare grounds mean that arriving at any of them feels like a destination in itself.
